Citri-Fi® Citrus Fiber in Fruit Fillings
Citri-Fi citrus fiber contains innate pectin due to the patented process. As a result, at low usage levels and in >55 Brix and < 3.5 pH conditions, Citri-Fi activates to create gelling textures. Because of this, Citri-Fi improves textures of fruit-based preparations, fillings or spreads. Moreover, this natural ingredient also extends added pectin to provide cost savings depending on the market.
