Citri-Fi® Citrus Fiber is a Natural Emulsifier

Citri-Fi natural citrus fiber contains both insoluble and soluble fiber. Because of this, Citri-Fi contains high levels of intact of pectin. The pectin content and high surface area use physical and chemical mechanisms to create the emulsification properties. As a result, this natural citrus fiber improves texture and mouthfeel of dressings, sauces and dairy products. Moreover, this natural ingredient also cleans up carbonate and sports drinks by providing weighting and emulsification. At low levels ranging from 0.2% to 0.6%, Citri-Fi delivers high functionality in addition to being a natural emulsifier.
