Citri-Fi® Citrus Fiber is a Natural Emulsifier
Citri-Fi natural citrus fiber contains both insoluble and soluble fiber. Because of this, Citri-Fi contains high levels of intact of pectin. The pectin content and high surface area use physical and chemical mechanisms to create the emulsification properties. As a result, this natural citrus fiber improves texture and mouthfeel of dressings, sauces and dairy products. Moreover, this natural ingredient also cleans up carbonate and sports drinks by providing weighting and emulsification.
